Herb Dressing

Whether you are growing it or scoping out your local farmers market, herbs and greens are plentiful.  I actually like just eating them straight in my salad or adding them to my dressing.  They are so much more than just a garnish your meats.  This dressing is extra special as it is vegan and it contains NO OIL!!!!

  • 1/4 cup Chickpea water (Aquafaba)
  • 1/2 tsp. Garlic Powder
  • 1/4 tsp. Minced Fresh Dill
  • 1/2 tsp. Minced Fresh Parsley
  • 1/4 tsp. Pink Sea Salt
  • 1 tsp. of Agave Syrup
  • 1 tsp. of Lemon Zest
  • 1 tbs. of Lemon Juice
  • 2 tsp. of Mustard

Use an emulsion blender or whatever blender you have on hand, blend until its a smooth almost creamy consistency.

Salad

  • 1 cup Baby Spinach
  • 1 cup Baby Arugula
  • 1 cup Baby kale
  • 1/2 cup of Cilantro
  • 1/4 cup of Black Olives

Toss together and add dressing!

You can also use it to top baked or smoked salmon….or even a poached egg!  Dont limit yourself!
