Herb Dressing
Whether you are growing it or scoping out your local farmers market, herbs and greens are plentiful. I actually like just eating them straight in my salad or adding them to my dressing. They are so much more than just a garnish your meats. This dressing is extra special as it is vegan and it contains NO OIL!!!!
Salad Dressing
- 1/4 cup Chickpea water (Aquafaba)
- 1/2 tsp. Garlic Powder
- 1/4 tsp. Minced Fresh Dill
- 1/2 tsp. Minced Fresh Parsley
- 1/4 tsp. Pink Sea Salt
- 1 tsp. of Agave Syrup
- 1 tsp. of Lemon Zest
- 1 tbs. of Lemon Juice
- 2 tsp. of Mustard
Use an emulsion blender or whatever blender you have on hand, blend until its a smooth almost creamy consistency.
Salad
- 1 cup Baby Spinach
- 1 cup Baby Arugula
- 1 cup Baby kale
- 1/2 cup of Cilantro
- 1/4 cup of Black Olives
Toss together and add dressing!
You can also use it to top baked or smoked salmon….or even a poached egg! Dont limit yourself!
