Strawberry Mango Salad

Warmer weather means more berries and mangos in the market! When people think of fruit recipes, usually a dessert or some type of sweet treat comes to mind.  However, I always love combining strawberries and mangos to make my favorite salad.  The goal in making this salad is to balance the sweetness of the fruit with the saltiness of the pumpkin seeds. I prefer using a heartier salad blend like a cabbage or broccoli slaw.  I find that this holds up better to the dressing and works better in terms of texture against the fruit. Although it is optional, do try this recipe with the optional chili flakes and cajun pumpkin seed.  The heat of the spices rounds out the flavor of the salad. I have been making this strawberry mango salad for years and finally decided to put the recipe on my blog.

Strawberry Mango Salad RecipeStrawberry Mango Salad

Ingredients:

  • 1 cup of halved fresh strawberries
  • 1/2 cup of diced or sliced mangos
  • 2 cups of shredded cabbage or broccoli slaw
  • 1/4 cup of cubed Haas avocado
  • 1 tablespoon of roasted pumpkin seeds or Jenny’s Cajun Pumpkin Seeds
  • 1 serving of Jenny’s Poppy Seed Dressing or your choice of gluten free poppy seed dressing
  • OPTIONAL: 1/4 teaspoon of red chili flakes and 1 teaspoon of diced green onions

Directions:

Combine all the ingredients together and you can top with the optional toppings of red chili flakes and/or green onions.

This recipe makes a generous single serving size.
