Watermelon Mint Smoothie

Many times when I talk about summer, I talk about strawberries but we really can forget about the watermelon.  Where would 4th of July be without the wedges of watermelon with our barbecue?  I know that after a long day on the beach, my kids rush to the fridge to get a container of cut up watermelon that I had prepared over the weekend.  Lets also not forget that during the summer, watermelon is very affordable as well. In fact, we usually have extra cut up watermelon that I like to keep in the freezer. With all these reasons, it just makes sense that I should put together a watermelon recipe.  Today I wanted to do a refreshing frozen watermelon and mint smoothie.  The combination of these 2 ingredients is very refreshing after being out in the heat all day. Lets get started with this smoothie before the summer heat gets to us! 😀

Watermelon Mint Smoothie Recipe

Ingredients:

  • 2 cups of frozen watermelon (cut up into cubes and frozen the night before)
  • juice and zest of 1/2 a lime
  • 1 tsp of raw coconut or agave syrup (non-vegans, feel free to use raw honey)
  • 10 cleaned mint leaves

Directions:

  1. Place all the ingredients into a blender and blend till smooth.
  2. Pour into your favorite container and enjoy!
