Citrus Cole Slaw

Like most recipes for me, it always starts with what I have in the house.  Last week, the supermarket was selling those bags of shredded cabbage (aka coleslaw mix) for 99cents. To me, that’s a great price because I can get 2 servings out of it and that comes out to be 50cents a serving. Honestly, how can you go wrong with a price like that?  I happen to still have a few bags left over and I needed to make a quick side for my roasted chicken.  I looked around the kitchen and also saw I had some oranges that needed to be eaten.  With all that, we have the birth of the Citrus Cole Slaw.  I have to say, I am kind of in love with this right now because it’s the perfect balance of creamy and fruity. YUM…

  • 2 cups of shredded cabbage
  • 1 peeled and separated orange
  • 1 tsp. of your favorite allergen-safe mayonnaise (vegans can use a vegan version)
  • 1 tsp. of mustard
  • 1 TBS. orange juice
  • a pinch of cracked black pepper and pink sea salt to taste

Directions:

Combine all the ingredients and eat!

Recipe makes 1 serving
