Burrito bowls are one of my favorite things to eat because in our family it’s a remake of leftovers. I know there are so many places that have them now but other than worrying about allergies…having to pay $10 per person for a family of 6 can be pretty steep. Another reason for making it at home is that it cleans up the leftovers in mama’s fridge pretty nicely! PLUS, everyone in the family can change it to their taste!
Ingredients:
- 3/4cup of leftover chili or taco meat
- 1/2 cup of cooked corn kernels or red/black beans
- 1/4 cup of cilantro
- 1 cup of micro greens or mixed salads
- 1TBS green onions
- 1/4 avocado slice
- 3TBS plain greek yogurt or nondairy plain yogurt (optional)
- hot sauce (optional)
Directions:
- Warm up your leftover chili
- Get a nice clean bowl and start assembling
- First layer the greens, then the cilantro and green onions
- Next later the corn and the warmed up leftover chili
- At the end top with the yogurt and avocado slices
- Add a splash of your favorite hot sauce and enjoy
