Non-Alcoholic Strawberry Daiquiri

There is definitely something in the air…I’m starting to dream of mojitos and daiquiries.  The sun is out and the breeze is warm, making you want to lounge on the beach and drink pretty drinks. As much as I would love to hop in a car and drive off to the nearest beach, this gal has responsibilities.  Although…this doesn’t mean that I can’t sit on the porch with a cleaned up version of these pretty drinks while I watch my kiddies.  Since it is strawberry season, I am thinking of making a batch of Strawberry Un-Daiquiries.  This is a virgin strawberry daiquiri that my kiddies can enjoy with me.

Non-Alcoholic Strawberry Daiquiri Recipe

  • 2 cups of fresh or frozen strawberries
  • 1/8 cup of lime juice
  • 1/8 cup of lemon juice
  • 1/4 cup of cracked ice
  • 1 tablespoon of organic lemon zest
  • 2 teaspoon of your favorite vegan sweetner (stevia, raw organic coconut sugar, raw organic palm sugar or raw organic agave)
  • 1 teaspoon of organic sugar (for garnish)
  • 1 tablespoon of freeze dried strawberries (for Garnish)

Directions:

Making Strawberry Sugar

  1. In the blender or food processor, combine strawberries and sugar.
  2. Turn on “High” until strawberries and sugar are finely grounded.
  3. Transfer sugar to a plate until ready to use.

Prepping the Glass

  1. Chill the glass for 30min.
  2. Remove the glasses from refrigerator.
  3. Moist the rim with a little water.
  4. Dip it into the plate with strawberry sugar to coat the rim.

Making Strawberry Un-Dacquiri

  1. Pour lemon and lime juices into the blender.
  2. Add stevia and whirl to combine.
  3. Drop frozen berries and ice into blender container, a few at a time, blending until smooth.
  4. Pour into chilled glasses.
