Kiddo’s Quinoa Salad

Our addiction to quinoa, all started when a friend challenged me to make quinoa taste good.  She was convinced that quinoa was just a “glorified dirt”.  I was challenged to put together 21 recipes with quinoa and it HAD to taste good.  Lucky for me I have 4 built-in super honest taste testers…aka my kiddos!  Trust me, if they don’t like it…these little monkeys will find a way to get rid of it or pelt it at each other.  However, this quinoa salad passed the test and it is now part of their lunchbox staple!

Kiddo’s Quinoa Salad Recipe

Add Pepper Flakes for a Spicy Kick!

1 ½ Cup of Cooked Quinoa
1 Cup Chopped Bell Pepper
1 Cup of Halved Grape Tomato
½ Cup of Chopped Onions
½ Cup Chopped Carrots
1Tsp Extra Virgin Olive Oil
¼ Cup of parsley (free)
2Tsp Aged Balsamic Vinegar
¼ Tsp Red Pepper Flakes (Optional…but Kiddo likes spicy food)
Pink Sea Salt to taste

Directions:
Combine all the ingredients together!
This is one of those things that taste better the next day.
You can make this ahead of time or this can be a prepped day salad for later.
