Savory Potato Waffles
Years ago when I was in college I learned that the waffle maker was one of the most versatile pieces of equipment in the kitchen. Wait, hear me out on this one. I know many of you think…a waffle maker just makes waffles. Sure you can use it to make your traditional sweet breakfast waffle but you can use it as a pie maker, a sandwich press or for pizza pockets. With all that said, my favorite thing to make is a savory potato waffle. The outside of this waffle is crispy with the inside which is light and tender. My kids love this as a pre-race snack or as a side to their dinner. I usually serve it with some homemade tomato jam. The combination of the savory waffles and the natural sweetness of the jam is perfect. This recipe uses the simplest ingredients and is easy to make….enjoy!
Savory Potato Waffles Recipe
Ingredients
- 4 cups of shredded (grated) potato
- 2 large eggs
- 3/4 teaspoon of sea salt
- 1 teaspoon of dried parsley
- 1 teaspoon of onion powder
- 1 teaspoon of granulated garlic (garlic powder)
- a pinch of fresh cracked black pepper
Directions:
- Use a clean cheese cloth and squeeze out the excess liquid in the shredded potato. Really work at getting as much liquid as possible. This will give you a better crispy outside to your waffle.
- Once you squeeze the liquid out, remove the potato from the cheese cloth and put it in a bowl.
- Break the eggs and add it to the potato.
- Combine the rest of the ingredients (salt, dried parsley, onion powder, garlic powder and pepper) into the bowl.
- Mix the ingredients all together to make sure you have a uniform mixture.
- Use a large spoon and scoop the potato mixture into the waffle maker. These savory waffles cook the same way normal batter would cook in the waffle maker.
- Once the indicator light on the waffle maker says it is done, so are these savory waffles.
This recipe make approximately 8 small (approximately 4in.) waffles OR 2 large (approximately 8in) waffles

Would these freeze or refrigerate then reheat in a toaster oven well? Or would they still taste good cold? Hubbys going out of town soon with only a mini fridge and a toaster and I looking for ideas to send with him.

Hi Whitney, great question. These actually freezes very well. I usually make them in a large batch, then freeze them on a baking sheet lined with parchment paper. Once they are frozen I store them in freezer bags, my kids just take them and put them in a toaster. Check out my quinoa pancakes they also freeze well. Safe travels to your husband!

Wow they look amazing. This is definately a recipe I’m going to try. I am trying to cook more from scratch. I like to know exactly what is inside something rather than the random numbers and difficult to pronounce words on packet foods. Thanks 🙂
