Salsa Fresca…aka “Fresh Sauce”

Salsa Fresca, the name says it all doesn’t it?  Salsa Fresca means “Fresh Sauce” in Spanish.      Its clean, its fresh and its gluten free! Plus, you can always customized it to your taste. I usually make a batch with Jalepenos and a batch without Jalepenos but with extra garlic. I store the extras in an air tight mason jar and it’ll keep in the back of the fridge for approximately a week. The best thing about this salsa is that it’s so much more than just something that goes on your tortilla chips.  This is also great on grilled steak, chicken, fish or “Taco Tuesday”. Remember the empanadas we made earlier this week…this would make a great accompaniment for them!

Ingredients:

  • 4 Cups of Diced Tomatoes
  • 1/4 Cup of Diced Onions
  • 1/4 Cup of Chopped Cilantro
  • 1/2 Tsp. of Chopped Jalepeno
  • 1/2 Tsp. of Minced Garlic
  • 1/2 Tsp. of Pink Sea Salt
  • 4 Tsp. of Extra Virgin Olive Oil
  • Juice of 1/2 Lime
  • Juice of 1/2 Lemon

 

Directions:

Combine all the ingredients together and let it sit for 20min before serving.

This recipe serves 4.
