Hubby’s Quinoa Pancakes
Before we went gluten free one of our traditions was pancake sundays. I would make
the batter and the kids would help pick the leaves off the strawberries and my husband would work on the bacon. It was a full on family affair and I loved it. When we went gluten free, the tradition slowed down. One of the big reasons was that my kids were picky of their pancakes. One day on a whim, I had some leftover quinoa and decided to make pancakes with it. From a whim…became a tradition, now every Sunday mama makes quinoa pancakes for her babies.
Hubby’s Quinoa Pancakes Recipe
Ingredients:
- 1/2 cup cooked quinoa
- 1/4 cup of unsweetened vanilla flax milk (or any other vegan milk)
- 1 egg
- 3/4 teaspoon baking powde
- 3/4 teaspoon of vanilla extract
- dash of cinnamon
- organic vegetable oil spray
- maple syrup
Directions:
- Place quinoa, milk, egg, baking powder, cinnamon and vanilla extract in a blender or food processor.
- Make sure the baking powder is thoroughly mixed in.
- Lightly spray the non-stick pan with the vegetable oil spray.
- Place the pan on medium heat.
- Spoon the batter from the blender to hot pan to make 3 pancakes
- When the edges curls and bubbles…flip the pancake gently.
- Cook through the other side and serve with a 1-2 teaspoon of maple syrup.
- Recipe is for 1 serving and makes 3 pancakes, each pancake is approximately 4in.
