Strawberries and Cream Overnight Quinoa Recipe

After much rain in the Northeast the last few weeks, spring has finally come. I am so happy because in 2 weeks the strawberry fields by us are scheduled to open! Further, south some are already open and look at these beautiful gems of deliciousness.  Mmmmmm…fragrant and sweet…completely worth taking my 4 little crazies in to the fields for 2hrs. to fill 2 quart sized baskets. (Maybe…)

Strawberries and Cream Overnight Quinoa


  • 1/2 cup cooked quinoa
  • 1/2 cup unsweetened flax milk or vanilla flax milk
  • 3/4 cup of plain vegan yogurt
  • 1 teaspoon chia seeds
  • 2 teaspoon agave
  • 1/2 teaspoon vanilla extract
  • 1 cup of strawberries
  • dash of cinnamon


  1. Combine quinoa, flax milk, chia seeds, vanilla extract and cinnamon together in your container.
  2. Then layer 1 teaspoon of agave.
  3. Next, layer all the yogurt and add the last layer of 1 teaspoon of agave.
    Remember to top with the strawberries before eating.

NOTE: I limit myself to only 2 teaspoon of agave, but you can add another teaspoon or stevia according to your personal taste.
