CocoMango Overnight Quinoa
It must be mango season. Everywhere I go, I see mangos. They are at the local little markets to the big bulk Costco. There are so many varieties, there are the big roundish green and red one to the small little oval “champagne” mangos. All of them are delicious and have their own distinct flavor and texture. I will be honest with you, I love them all! I have been buying them by the cases, once right I make my puree. It’s so easy, all you need to do is just remove the skin and cut the flesh into a blender. Pulse for a min and you get this fantastic puree. Here is one of the things you can make with it, cocomango overnight quinoa.
INGREDIENTS:
- 1/2 Cup of Cooked Quinoa
- 1/4 Cup Almond Milk
- 1/4 Cup of Canned Coconut Milk
- 1 Tsp of Chia Seeds
- 2 Tsp of Agave Syrup or Raw Organic Honey
- 1/2 Cup of Mango Puree
- 3/4 Cup of Greek Yogurt or a Non-Dairy Yogurt (Vanilla or Coconut flavor works best)
Directions
Combine Quinoa, Chia Seeds, Almond Milk, and Coconut Milk together in your container. (Make sure you combine well, so that the Chia Seeds can bloom and thicken the mixture.)
Then layer 1 Tsp. of Honey
Next layer the Mango Puree
Add the last layer of the Greek Yogurt and another Tsp of Honey
NOTE:I limit myself to only 2 Tsp. of honey but you can add another tsp. or stevia according to your personal taste.
