Lemon Blueberry Overnight Quinoa

This week, I stopped by Costco and they had blueberries again! These berries were HUGE! When they look this good, I try to stay away from cooking them and eating them straight instead. This morning for breakfast I decided to make an overnight quinoa with it.  I really like the combination of lemons and blueberries…yum yum…enjoy!

Lemon Blueberry Overnight Quinoa Recipe

Delicious!

  • 1/2 cup cooked quinoa
  • 1/4 cup unsweetened flax milk  (If the yogurt looks watery, use less milk or omit.)
  • 3/4 cup of vegan yogurt (If you have no dairy allergies or are not vegan, you may use plain Greek yogurt.)
  • 1/2 tsp vanilla extract
  • zest of half of a Lemon
  • juice of a quarter of a Lemon
  • 1 tsp chia seeds
  • 2 tsp agave (or organic raw honey)
  • 1 cup blueberries

Directions

  1. Combine the quinoa, flax milk, chia seeds, with HALF OF THE LEMON ZEST, lemon juice and vanilla extract together in your container.
  2. Make sure the above is combined well and the chia seeds will bloom to be a binder.
  3. Then layer 1 tsp of Honey and then the Greek yogurt….add the last layer of 1 tsp of honey. 
  4. Mix the remaining lemon zest with your blueberries and store separately.
  5. Top the overnight quinoa with the berries when you are ready to eat.

NOTE: I limit myself to only 2tsp of honey but you can add another tsp. or stevia according to your personal taste.

This recipe makes one serving.
