If just seemed right to make Clean Eating Gluten Free Green Eggs and Ham!
“Green” Eggs and Ham Muffins
- Olive Oil Spray
- 4 Slices Low Sodium Ham
- 4 Egg Whites
- ¼-1/3 Avocado
Preheat oven to 375 degrees F.
Lightly coat 4 muffin cups with the olive oil spray.
Place 1 slice of ham into each muffin cup
Crack 1 egg and separate the egg whites into each cup.
You can store the yolks in the fridge for later use.
Bake in middle of oven until whites are firm, this will take about 10 minutes.
Let it sit for 3-5min before removing from the cups.
Divide the avocado into 4 portions and top each of the egg muffins.
