Roasted Brussel Sprouts
I absolutely cannot complain, I have kids who love brussels sprouts. Recently, I happen to stumble upon a large bag of it at Costco and of course I had to buy it. This time of the year we see it at most grocery stores and I thought I would share how I prepared it. I know… this recipe almost seems TOO easy. Well, yea! Most of the time eating clean is that easy or at least it should be… don’t you think?
Roasted Brussel Sprouts Recipe
Ingredients:
- 1 pound Brussels sprouts, trimmed and halved lengthwise
- 1/4 cup of sliced organic yellow onion
- 6 cloves of garlic minced
- 4 tsp extra-virgin olive oil
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
- OPTIONAL: 1/4 teaspoon of red chili pepper flakes
Directions:
- Preheat oven to 400°F.
- Toss Brussels sprouts and onions with oil, garlic, salt and black pepper on a
baking sheet and roast, stirring once or twice, until deep golden brown, crisp outside and tender inside. This process should take approximately 30 to 35 minutes. - The leaves that are loose will be especially brown and crispy.
- Transfer to a serving bowl or platter.
- Serve as is or with some red chili pepper flakes on top.
