Quinoa Fried Rice

One of the foods that my kiddos love in their lunch boxes is fried rice.  Its something that is pretty easy to make on the fly or you can make it the night before and reheat in the microwave. In my mission to get the family to eat healthier, I have been replacing our white rice with yellow quinoa. Don’t get me wrong, there are days I still use white rice.  I am Chinese and when I get real traditional, that is what I use. The best thing about this recipe is the flexibility; you can add vegetables, chicken or shrimp. This is the base recipe for you to work off of.  Have fun with this recipe and get your family’s input on how to play around with it! 🙂

Ingredients:
2 Cup Cooked Quinoa
4 Eggs
1 Tsp of Garlic Powder and 1 Tsp of Minced Garlic
¼ Cup of Chopped Onions
¼ Cup of Parsley
Oil Spray (I like to use the Organic Canola Spray)

Directions:
Crack eggs in a separate bowl and scramble.
Spray nonstick pan with some oil spray and cook the eggs over high heat.
It will cook quickly, once the eggs are scrambled soft (take it out and set aside).

With the same pan, spray the pan lightly again with the oil spray.
Over high heat, quickly sauté the onions and the parsley until the onion are golden.
Then add the quinoa to the onion/parsley mixture in the pan.
Use the spatula to quickly mix everything together, and then add the eggs, salt, minced garlic and garlic powder. Break up the eggs and keep moving the quinoa in the pan for another 2-3min. Serve hot.

(For my Vegan Friends, please omit the eggs and you can exchange with 1cup of your favorite cooked veggies to toss in with your quinoa)
