I thought I was done with my quinoa series but I can’t seem to stop.
However, what else am I going to do with a 15lb. bag of quinoa?
This weekend I was playing around with different varieties of overnight quinoa.
This last one…I liked A LOT!

Carrot Cake Overnight Quinoa
Ingredients

My favorite dessert made into a breakfast.
½ Cup Cooked Quinoa
¼ Cup Unsweetened Vanilla Almond (or Rice) Milk
(If your yogurt looks watery, use less milk or omit.)
¾ Cup of Greek Yogurt (Recommended Dairy Brand Use Fage or for Non-Dairy Brand use So Delicious Vanilla)
1/3 Cups of Shaved Carrots (Make sure its fine)
1Tsp Chia Seeds
2Tsp Maple Syrup
½ Tsp Vanilla Extract
¼ Tsp Cinnamon
OPTIONAL: 2TBS Chopped Pecans or Walnuts (Nut allergies consider using roasted pumpkin seeds!)
Directions
Combine Quinoa, Almond Milk, Chia Seeds, (The Chia Should Bloom to Be a Thickener), Cinnamon and Vanilla Extract together in your container.
Once the ingredients above is combined well.
Then layer 1Tsp of Maple Syrup
Then layer the Greek Yogurt.
Then layer the Shaved Carrots.
Add the last layer of 1Tsp of Maple Syrup.
Top the overnight quinoa with the nuts when you are ready to eat.
NOTE:I limit myself to only 2tsp of honey but you can add another tsp. or stevia according to your personal taste.
