Apple Sauce Blender Muffin
This weekend, we had some people come over last minute for coffee. I really wanted to put out some yummy treats to go with our coffee. This recipe fits the bill because it uses basic ingredients that most of us have in our pantry and refrigerator. Ingredients such as apple sauce, flour, eggs, maple syrup, baking soda, and vanilla extract. Other than the ingredients being easily sourced, all you need to do is dump everything into the blender. Once everything is blended smooth, just pour it into a muffin tin. The whole process of making these muffins took about 30 minutes. They say “an apple a day, keeps the doctor away” but these muffins bring friends together. Enjoy!
Apple Sauce Blender Muffin Recipe
Ingredients
- ¼ cup of organic maple syrup
- 1 ½ cup of organic apple sauce
- 2 organic eggs
- ¼ teaspoon of sea salt
- 1 teaspoon of baking soda
- 1 teaspoon of vanilla extract
- ½ teaspoon of ground cinnamon
- 3 tablespoon of softened soy-free vegan butter
- 1 cup of gluten free flour
- OPTIONAL:1 tablespoon of vanilla protein powder
Directions:
- Preheat the oven to 350 F.
- Place all the ingredients into the blender and blend on high for approximately 5 minutes.
- Make sure the mixture is smooth with no bumps, you want to make sure all the ingredients are incorporated into the batter.
- Prepare your muffin tin by lining with parchment paper cupcake cups.
- Portion out your batter into 10 wells, as this recipe makes 10 muffins.
- Place your muffin tin into the oven and bake for 20 minutes. Since, altitude, make of oven and weather can make a difference in cooking time; I recommend using the “toothpick test”. The toothpick test is to insert the toothpick into the center of the muffin and if it comes out clean, it is done.
- Remove the muffins on to a clean baking rack and allow to cool for 10 minutes before serving.
- This recipe makes 9 large muffins. Enjoy!

I am also egg free…..I heard that you can substitute flax meal and water but I am not sure of the ratio….would you know ?

Hi Eileen, my “go-to” formula for 1 flax meal egg is 3 tbs water:1 tbs flax meal. So, if the recipe calls for 2 eggs then you multiply by the ration by 2.

oh thank you so much….they sound delicious and I really want to try this but didn’t know what to do about the eggs…….will start gathering up the ingredients and post a note once I get the chance to bake them. ❤

I understand, at one point my kiddo was also allergic to eggs as well. Have fun with the recipe and make sure everything is thoroughly blended. 🙂

No problem, 1/4 cup does the trick for us. Some people like it sweeter but I like it with just a hint 🙂
