Avocado Corn Salad

There is nothing that says summer more than corn on the cob. Especially midsummer, when corn is so economical. I usually make extra corn to have leftovers and then I cut the kernels off. All you do is toss the grilled or steamed corn kernels with some other veggies of the season to make this avocado corn salad.  This salad is very versatile, you can use it as a side, a main dish or even as a corn salsa! A dish that can triple task? Who doesn’t love that?  Another reason to make this dish is that it is very easy to make and a great way to up-cycle leftover corn.  Lets get started with this recipe…

Avocado Corn Salad Recipe
Avocado Corn Salad

Ingredients:

  • 1 1/2 cup of corn kernels
  • 1 1/4 cup of quartered grape tomatoes
  • 1/4 cup of diced green onions
  • 1/4 cup of chopped cilantro
  • 1 avocado (diced)
  • 2 tablespoon of fresh lemon juice
  • 3/4 teaspoon of sea salt
  • 1/8 teaspoon of cracked black pepper

Directions:

  1. Gently combine all the ingredients (EXCEPT THE AVOCADO) together.
  2. Adjust salt and pepper to your taste.
  3. At the end, gently fold the avocado into the salad…the reason why we do this is because we don’t want the avocados to completely break apart in the salad.
  4. Enjoy!
