Simply Strawberry Sorbet
Have you ever noticed that the healthier or cleaner something is the more expensive it is at the grocery store? I’m being completely honest here. I went to the local supermarket today to look for a sorbet that had no filler, refined sugar or red food coloring (red 40 allergy for 2 of my kids). Plus, I had to find a product that didn’t share a facility with dairy or nuts. If it was organic, that was an extra perk. What I found that fit the description that I wanted cost $7-$10 for a pint. That is absolutely insane, at least in my frugal mommy head.
Here is the funny thing, my friends tease me about being an allergy version of Martha Stewart. I wish. What drives me is necessity and the fact that I can’t get myself to spend over $7 for a pint of strawberry sorbet. My allergy kid was having a party. All the others were having ice cream and she wanted strawberry sorbet. This meant I had to either shell out the money or become creative. My dear readers, at this time you know I am going to go for the cheaper route! LOL!
My next stop was going to be Costco and they sell the huge bags of frozen organic strawberries. Having made some other frozen treats, I was confident that this would work. If it didn’t work then I will have to use up 6 lbs. of frozen strawberries in another way. (This means lots and lots of smoothies, heh heh.) In all seriousness, this strawberry sorbet recipe worked like a charm and I’ll be making extra to keep in the freezer for the kiddies (and me). Enjoy!
Simply Strawberry Sorbet Recipe
Two ingredients only!
- 3 cups of frozen organic strawberries
- 1 tablespoon of organic raw agave
Directions:
- Take out the frozen strawberries and let it sit for 2-3 min. The result you want is for the outside to get just a little soft and mushy but still have the hard frozen center.
- Put the “lightly thawed” strawberries and agave into a blender (or food processor) and give it a thorough blend. If the blender or food processor is not producing a smooth sorbet that just means that you need to let is sit and thaw more. Give it another 2 min to thaw and then run the food processor again.
- You can serve immediately or place in the freezer to enjoy later.
- This recipe gives you 2 servings.
Troubleshooting your simply strawberry sorbet:
*If the result is too watery, then it means that the strawberries were too thawed out but just put the mixture into a Pyrex container. Cover the Pyrex containing the strawberry mixture and place it in the freezer for 10 min. This step will set the mixture, afterwards you can remove from the freezer and scoop out your sorbet.
**If the result is just too hard, let is sit out for a few min to soften or melt. This will make it easier for you to scoop.

What can we do if we do not have raw agave available in our area? I can get agave syrup at the store, would that work?

Yes, regular agave syrup would work or if you are not vegan, honey would work too. 😀
