Dr. Seuss Day Menu
March 2 is Dr. Seuss Day. This definitely is a day that you appreciate more when your
have little children or when you work with little children. Everything my kids do on this day revolve around Dr. Seuss. Teachers and students get all dressed up, school work and crafts revolve around Dr. Seuss’ work. It really is a lot of fun…makes me wonder why we didn’t do this when I was a kid. (Yes, I am jealous of the fun my kids have on this day.) This is why I decided that Dr. Seuss Day shall start at HOME!!! During the weekend, I made a full dinner based on various Dr. Seuss stories.
We started the out the meal with the classic, Green Eggs and Ham. Then worked on to the main course with One Fish, Two Fish and Noodles for Poodles. Dessert and beverage was Pink Ink (inspired from One Fish, Two Fish) and Melon for Sneetches (inspired from The Sneetches). We had Dr. Seuss coloring sheets that I found online, so they can color while they ate. I also lay the kids favorite books on the table for them to find their favorite lines. It was a fun night of laughing and talking about our favorite characters, even my tween was enjoying the festivities. I think this will definitely be repeated next year.

Green Eggs and Ham
Gluten free, nitrate free ham and avocado omelet with Jenny’s Green Sauce
One Fish Two Fish Sandwiches
Pan seared white fish on whole grain fish-shaped toast (I used Udi’s Gluten Free Bread).
Noodles for Poodles
Whole grain gluten free spaghetti with zoodles (zucchini noodles) sautéed in a coconut amino sauce.
Melon for Sneetches
Watermelon with “stars on the belly”.

They didn’t have it when I was a kid but now Dr. Seuss Day is recognized in the schools to correspond with National Reading Week. The things I learn as I get older 😀
