Plantain Pizza Crust
This weekend my daughter had a birthday party to go to and they were going to have pizza there. Normally, I would make her a quick pizza with a gluten free roll or make a quick batter crust. As luck would have it, we have no rolls and no gluten free flour to make any quick crust. They say “Necessity is the mother of invention”, and they werent kidding! I literally looked around the counter, saw a plantain and my cartoon lightbulb lit up! I have made wraps with plantains before, so a pizza crust should not be too far off. Luck was on my side that day because what resulted was a nice pliable pizza crust. Yup, it was a crust that allowed me to fold my slice…happy happy. Enjoy my friends!
Plantain Pizza Crust Recipe
Ingredients:
- 1 green plantain
- 1 large egg
- 1 Tbs of arrow root starch
- 1/2 tsp of baking powder
- 1/4 tsp of oregano
- 1 pinch of sea salt
- oil spray
Equipment:
- 12in. non-stick pan
- Large skillet for non-stick pan
Directions
Making of the Plantain Pizza Crust
- Place all the ingredients into a blender.
- Blend until all the ingredients are smooth.
- Spray your non-stick pan with a light layer of oil spray.
- Turn on the flame to the stove and heat your pan over medium heat.
- Once your pan is hot, pour the batter into the skillet and spread out the batter evenly.
- Get the batter spread out all the way to the edge so that you have a nice 12in pizza crust.
- When the crust starts to set and form, you have to think of this like a pancake. If the top looks too wet and gooey…dont flip just yet.
- A good indication on when to flip is when you see the edges start to pull away from the pan. Then take a large spatuala flip the crust over…then I would turn off the stove. The heat from the pan should be hot enough to set the other side of the crust.
Making Jenny’s Allergy Safe Pizza
Ingredients:
- 1-12in. Plantain Pizza Crust
- 1/4 cup of Vegan Cheese (Today, I used Trader Joe’s Vegan Cheese that is also soy-free.)
- 1/3 cup of your favorite No Sugar Added marinara sauce or Jenny’s Forgotten Tomato Sauce
Direction:
- Preheat the oven to 400F.
- Line a tray with parchment paper.
- Place your plantain pizza crust you made earlier on the parchment paper.
- Spread your marinara on the crust with a spoon, make sure it covers your crust evenly.
- Sprinkle the cheese on top of your marinara, if you want you can top your pizza with other toppings. My kids like it plain, so I only sprinkle a little more oregano on the cheese.
- Place the pizza in the middle rack of the oven and cook till the cheese bubbles (approximately 20min).
- Turn off the oven and let it cool for 2-3min.
- Slice and enjoy!
1 Serving is half a pizza…I don’t know about you but Im pretty happy about this!

LOL! Plantains and tomato sauce is pretty universal. The cheese will be the difference. I used a vegan cheese here since my daughter is the taste tester and she has a dairy allergy.
