Cauliflower Grilled Cheese

When I was told to NOT eat wheat and dairy, the first thing that popped into my head was “Ugh! I could really use a grilled cheese!”  Isn’t that always the case?  What if I told you that you could have one and that it would count as a veggie? This is not a trick; it’s the magic of cauliflower. Many of you have heard of cauliflower crust pizza but we can take it one step further and make grilled cheese.

Serves: 2

Ingredients:
½ head cauliflower (about 2 cups riced)
½ teaspoon Onion Powder
½ teaspoon Garlic Powder
*1/4 cup low fat shredded mozzarella cheese
*2 slice of cheddar (DAIRY FREE OPTION I use Daiya or Trader Joe’s Vegan Cheese)
1 egg, beaten
1 teaspoon Italian Seasoning
Olive Oil Spray

Instructions:
Pre-heat oven to 400° F.
Prep your pan with oil.
It will stick if you don’t grease it properly or use a Silpat Baking sheet)
Prep your cauliflower and chop the florets into chunks.
Add to a food processor and pulse just until the texture is similar to rice.
Place cauliflower in an uncovered microwave-safe bowl and cook for 8 minutes.
Let the cauliflower cool and squeeze as much water out as possible.
In a bowl combine the cooked cauliflower with ¼ cup of the cheese only and the other remaining ingredients.
Spread dough out evenly on the Silpat to make your bread slices – about ¼ to ⅓ of an inch thick.
Bake the bread for 25 minutes or until the crust is crispy on the edges and cooked through the middle.
Remove the crust from the oven.
Allow the bread to cool for 2-3 minutes
Then use the bread to make a cheese sandwich (with 1 slice of cheese).
Spray your skillet with a light coating of oil and cook for 2 min on each side over medium heat.
(Or you can cook it till it is golden brown and cheese has melted.)

This recipe make 4 slices.
